I haven’t tried it yet, but in Polylang plugin there is an option to display flags or text, so I believe there is the same option in WPML.
EDIT: Displaying text is possible, but you will have to do a little code modifications (http://wpml.org/forums/topic/remove-flags-and-replace-with-language-switcher-text/). If you decide for this option, let us know and we will take a better look on how to achieve it with Elvyre theme on the most simple way.
